Unlike most citrus infusions, Yuzu tea is made exclusively from the peel, giving it an aroma unlike lemon, orange, or mandarin. Harvest takes place only once a year, between November and February, in orchards growing at elevations of 200-600 meters near the coast of Jeju Island. Similar to our Buckwheat Tea, we work with a small producer competing among only a handful of authentic Yuzu growers, who prefers not to disclose details of the production process, including drying temperature, humidity, and drying time. We respect that choice. In the end, the process matters, but the real test is the final result.
Yuzu originated during the Tang Dynasty in Hubei Province, central China. Around 1,300 years ago, it made its way to Korea, where it became an important part of the country's culinary culture. It is a natural hybrid between sour mandarin and Ichang Papeda, an ancient Chinese citrus variety. Today, Yuzu is one of the signature citrus fruits of Korean and Japanese cuisine, widely used by chefs in fine dining, desserts, cocktails, and professional kitchens around the world.

Instructions
Infuse half a teaspoon of yuzu (1.5g) in hot water 80-100°c for about 2-4 minutes in a pitcher or directly into a cup (200-500 ml)
