Naturally grown white tea from Tai Mu Shan 太姥山, the original and most prestigious growing area in the birthplace of white tea, Fuding, Fujian, China. First spring harvest from late March 2021, classified as Bai Mu Dan 白牡丹, open or closed bud and two leaves pick. Grown in sustainable, pesticide-free methods (certified organic) at 450–550m altitude, from tea bushes reaching up to 1.5 meters high. The leaves were traditionally dried and slowly oxidized without the use of dryer machine, unlike most commercial white teas that are machine-dried and ready to drink within a few days.
This tea has a grassy character and a well-balanced profile of umami, soft acidity, and a sweet finish. A dynamic development over multiple infusions, with hints of vanilla and green apple. Medium acidity and medium body. A relatively high grade batch of Bai Mu Dan, which was aged for four years before deciding it was ready to be released. In Fuding, unlike other tea-growing regions, it is not customary to drink Bai Mu Dan within its first two years, especially not higher grades.
In addition to the grower’s organic certification, this material was independently tested on our behalf at Eurofins Lab in Taiwan against 539 pesticide residues and found to be completely clean.
Suitable for further aging for many years in its original packaging (see storage instructions). Suitable for drinking throughout the day, all year long.
